Sometimes my pictures just don’t do justice to how amazing a recipe truly is. And that is totally my fault – not the fault of the food! This is one of those dishes. It’s really difficult to photograph an all-white dish. I tried to sprinkle a little green parsley on there to give it a bit of color but nevertheless, it still manages to all blend together. USE STORE BOUGHT ROTISSERIE CHICKEN AS A SHORTCUT

This is really the best tip for making a lot of chicken recipes much tastier and much easier to prepare. Rotisserie chicken has tons of slow-roasted flavor but it also makes for one less step in the preparation of this Crock Pot Chicken Alfredo Lasagna.

My husband, who is extremely picky in every sense of the word, said this recipe has to be one of his top favorite recipes ever. So, you’ll have to take my word for it when I say that is high praise indeed. My son loved it too. So I feel like I’ve won a blue ribbon on this.

WHAT YOU’LL NEED:
rotisserie chicken
shredded Italian cheese blend
ricotta cheese
alfredo sauce
water
Italian seasoning
garlic
lasagna noodles
mozzarella cheese
dried parsleyslow cooker, rotisserie chicken, Italian seasoning, Alfredo sauce, lasagna noodles, garlic, ricotta cheese, mozarella cheese
Cook’s Note: Shredded mozzarella cheese not pictured. Forgot to throw it in the shot. Oops. Also, be sure to get the “family-size” rotisserie chicken. They are larger and will provide more meat.

HOW TO MAKE CROCK POT CHICKEN ALFREDO LASAGNA:

First, cut up your rotisserie chicken. You can remove the skin or leave it on – up to you. Set aside.diced rotisserie chicken
Next, in a separate bowl combine Italian cheese blend with ricotta cheese. Mixture will be thick.Italian cheese blend combined with ricotta cheese
Finally, in a third bowl, combine both jars of alfredo sauce with water, Italian seasoning and garlic. Whisk until combined.

Now, time to assemble the lasagna layers. I am using the crock pot casserole cooker for this recipe. However, you can do this in a 4-quart oval slow cooker as well. Just break up the lasagna noodles as needed to cover any open spaces.

Spread 1/4 of the alfredo sauce into the bottom the slow cooker.Alfredo sauce spread into bottom of casserole slow cooker

Arrange 3-4 lasagna noodles on top of the alfredo sauce (break noodles to fit.) It’s okay if some of the noodles are slightly layered on top of each other.uncooked lasagna noodles layered in 4 quart casserole slow cooker

Spread 1/3 of the chicken on top of lasagna noodles.diced, cooked rotisserie chicken layered on top of lasagna noodles

Then spread 1/3 of the cheese mixture on top of the chicken. I just take a spoon and dot it all around.ricotta cheese and mozarella cheese mixture spread on top of rotisserie chicken layer

Repeat these three same steps two more times (alfredo sauce, noodles, chicken, cheese mixture.) Try to make sure the alfredo sauce covers to the edge of the noodles. This will help the noodles cook properly. Finally, top with shredded mozzarella cheese and dried parsley (optional)shredded mozzarella cheese topped lasagna

Cover and cook on low for 2 1/2-3 hours (or until noodles are tender.)silver casserole crock pot
Cook’s Notes: Slow cookers are not all the same so my advice is to check your lasagna after 2 1/2 hours then keep an eye on it after that point. This isn’t really a set-it and totally forget-it type crock pot meal.Crock Pot White Chicken Alfredo Lasagna

  • 2 1/2 cups store-bought rotisserie chicken, (diced)
  • 2 cups shredded Italian cheese blend
  • 1 (15 oz) container ricotta cheese
  • 2 (15 oz) jars cheesy alfredo sauce
  • 1/2 cup water
  • 1 tsp Italian seasoning
  • 1 tsp minced garlic
  • 9-12 lasagna noodles, ((depending on your slow cooker size))
  • 2 cups shredded mozzarella cheese
  • dried parsley ((optional))
  1. First, cut up your rotisserie chicken. Set aside.

  2. Next, in a separate bowl combine Italian cheese blend with ricotta cheese.
  3. Mixture will be thick.
