WHAT YOU’LL NEED:
sweet corn
cheddar cheese
green pepper, diced
red onion
mayonnaise
taco seasoning
Fritos
black pepper

Fritos corn chips, mayonnaise, sweet corn, cheddar cheese, taco seasoning, red onion, green pepper, salt and pepper

HOW TO MAKE FRITO CORN SALAD:

In a large bowl, combine thawed corn, cheese, diced bell pepper and onions. Stir well. Note: Please use a bigger bowl than I did here. This bowl was a bit too small and made it difficult to stir once I added all the other ingredients.
frozen corn, diced green peppers, diced red onion, shredded cheese in a bowl
Then add in mayonnaise and taco seasoning.
mayonnaise and taco seasoning stirred together with corn, shredded cheddar cheese, green peppers and diced red onions in a white and green bowlStir until thoroughly combined.
yellow corn, diced green peppers, diced red onion, shredded cheddar cheese stirred together with a spoon in a Pampered Chef collapsible white and green bowl
I like to season it with a little bit of pepper too (this is optional.)seasoning Frito Corn Chip Salad with ground black pepper
Then just before serving, stir in crushed Fritos so they stay nice and crunchy. Some folks put in half the crushed Fritos at the time they make it, then add the other half in right before serving.

I always think it looks pretty when you have a few crushed ones on top when you serve it.

FRITO CORN SALAD

This Frito Corn Salad is a unique appetizer that combines corn kernels, cheese, taco seasoning, Fritos, green peppers and red onion. So good!

  • 1 (12 oz) bag frozen corn kernels (thawed)
  • 2 cups grated cheddar cheese
  • 1 green pepper (diced)
  • 1/2 cup red onion (finely diced)
  • 1 cup mayonnaise
  • 1 tbsp taco seasoning
  • 1 (10.25 oz) bag Fritos (crushed (or Chili Cheese Fritos))
  • pepper (to taste)
  1. In a large bowl, combine thawed corn, cheese, diced bell pepper and onions.
  2. Stir well.
  3. Then add in mayonnaise and taco seasoning.
  4. Stir until thoroughly combined. Season with pepper (optional)
  5. Just before serving, stir in crushed Fritos so they stay nice and crunchy.

Some folks put in half the crushed Fritos at the time they make it, then add the other half in right before serving.

Go with what is easiest for you when making this. Using pre-shredded cheese in a bag works just fine. And if you don’t have time to thaw out a bag of corn, then use 2 (15 oz.) cans of corn that are drained really well. Also, for a big bump in flavor, try using the chili cheese or BBQ flavored Fritos.
